Commis II – Above Eleven

Key Responsibilities:

  • Assist in the preparation, cooking, and presentation of menu items according to Above Eleven’s culinary standards.

  • Perform daily mise-en-place duties, ensuring readiness for service.

  • Follow recipes and instructions from the Demi Chef de Partie and Chef de Partie.

  • Support in maintaining stock rotation, proper labeling, and food storage practices.

  • Ensure the kitchen and workstations are clean, organized, and compliant with hygiene and HACCP standards.

  • Assist with receiving deliveries and checking quality of ingredients.

  • Operate kitchen equipment safely and report any malfunctions immediately.

  • Work closely with senior chefs to develop skills and support menu innovation.

  • Maintain high personal grooming standards and follow kitchen safety procedures.

  • Support the team during peak service periods to ensure timely and consistent output.

Skills & Qualifications:

  • Previous experience as Commis Chef in a high-volume or specialty restaurant preferred.

  • Basic knowledge of Japanese or Peruvian cuisine is an advantage.

  • Strong knife skills and understanding of basic cooking techniques.

  • Ability to work efficiently under pressure in a fast-paced environment.

  • Team player with a positive, eager-to-learn attitude.

  • Good communication skills and fluency in English.

  • Knowledge of food safety and hygiene practices.
