Chief Steward

The Chief Steward is responsible for overseeing the entire stewarding department, ensuring the cleanliness, hygiene, and organization of all kitchen areas, equipment, and back-of-house spaces. This role leads the stewarding team to maintain high sanitation standards, manage dishwashing operations, and ensure that all kitchen equipment and utensils are cleaned, maintained, and available for daily operations. The Chief Steward works closely with the Culinary and F&B teams to support smooth kitchen and banquet operations.

Additionally, the Chief Steward manages inventory of cleaning supplies, chemicals, and equipment while ensuring proper storage and safe handling procedures. The role is responsible for developing cleaning schedules, conducting training on hygiene and safety, monitoring waste management, and maintaining compliance with HACCP and hotel standards. Strong leadership and organizational skills are essential, as the Chief Steward ensures efficient teamwork and supports all food production outlets.

Required Experience & Qualifications

  • 3–5 years of experience in stewarding, including at least 1–2 years in a supervisory or senior role.

  • Previous experience in a 4- or 5-star hotel or large F&B operation is highly preferred.

  • Strong knowledge of hygiene standards, sanitation practices, and chemical handling.

  • Ability to lead and train a multicultural team effectively.

  • Familiarity with HACCP and kitchen safety guidelines.

  • High school diploma required; hospitality certification is an advantage.
