Chef de Partie – Fish Beach Taverna – Le Meridien Mina Seyahi Beach Resort & Waterpark

Position Summary

The Chef de Partie – Fish Beach Taverna is responsible for preparing high-quality Mediterranean and seafood dishes in accordance with the restaurant’s culinary standards. This role ensures consistency, freshness, and presentation while maintaining a clean and efficient section. The CDP supports the kitchen team in delivering an exceptional coastal-inspired dining experience.

Key Responsibilities

Culinary Preparation & Production

  • Prepare, cook, and present dishes from the Fish Beach Taverna menu, with a focus on seafood and Mediterranean cuisine.

  • Ensure all mise-en-place is prepared daily and maintained throughout the shift.

  • Maintain high standards of food quality, taste, and plating consistency.

  • Follow recipes, portion controls, and presentation specifications set by the Head Chef.

Kitchen Operations

  • Manage and oversee an assigned kitchen section independently during service.

  • Coordinate with other sections to ensure smooth and timely service.

  • Ensure storage areas, fridges, and freezers are organized and maintained to hygiene standards.

  • Monitor stock levels and report shortages to the Sous Chef in advance.

Quality, Hygiene & Safety

  • Follow HACCP and food safety standards at all times.

  • Ensure workstation and equipment are cleaned, sanitized, and maintained properly.

  • Label and date all products, ensuring proper rotation (FIFO).

  • Reduce wastage through proper handling and portioning.

Teamwork & Leadership

  • Guide Commis Chefs and assist them in building skill and confidence.

  • Communicate effectively with colleagues and support a positive kitchen environment.

  • Contribute ideas for menu improvements, specials, and seasonal offerings.

Skills & Qualifications

  • Previous experience as a CDP or strong Demi Chef de Partie in a seafood/Mediterranean restaurant.

  • Strong knowledge of seafood preparation, grilling, marination, and presentation.

  • Ability to work under pressure while maintaining high culinary standards.

  • Excellent teamwork, communication, and attention to detail.

  • Culinary diploma or relevant certification preferred.
