Position Summary
The Chef de Partie – Fish Beach Taverna is responsible for preparing high-quality Mediterranean and seafood dishes in accordance with the restaurant’s culinary standards. This role ensures consistency, freshness, and presentation while maintaining a clean and efficient section. The CDP supports the kitchen team in delivering an exceptional coastal-inspired dining experience.
Key Responsibilities
Culinary Preparation & Production

Prepare, cook, and present dishes from the Fish Beach Taverna menu, with a focus on seafood and Mediterranean cuisine.

Ensure all mise-en-place is prepared daily and maintained throughout the shift.

Maintain high standards of food quality, taste, and plating consistency.

Follow recipes, portion controls, and presentation specifications set by the Head Chef.
Kitchen Operations

Manage and oversee an assigned kitchen section independently during service.

Coordinate with other sections to ensure smooth and timely service.

Ensure storage areas, fridges, and freezers are organized and maintained to hygiene standards.

Monitor stock levels and report shortages to the Sous Chef in advance.
Quality, Hygiene & Safety

Follow HACCP and food safety standards at all times.

Ensure workstation and equipment are cleaned, sanitized, and maintained properly.

Label and date all products, ensuring proper rotation (FIFO).

Reduce wastage through proper handling and portioning.
Teamwork & Leadership

Guide Commis Chefs and assist them in building skill and confidence.

Communicate effectively with colleagues and support a positive kitchen environment.

Contribute ideas for menu improvements, specials, and seasonal offerings.
Skills & Qualifications

Previous experience as a CDP or strong Demi Chef de Partie in a seafood/Mediterranean restaurant.

Strong knowledge of seafood preparation, grilling, marination, and presentation.

Ability to work under pressure while maintaining high culinary standards.

Excellent teamwork, communication, and attention to detail.

Culinary diploma or relevant certification preferred.
