Head Baker – W Muscat is a leadership role responsible for managing all bakery operations, ensuring high-quality baked goods, and delivering exceptional culinary experiences. As the Head Baker, you will lead the pastry and bakery team, oversee production, maintain inventory, and ensure all products meet W Hotels’ luxury standards.

About the Role

The Head Baker is responsible for managing daily bakery operations, including production planning, ingredient management, quality control, and team supervision. You will ensure consistency in taste, presentation, and service while upholding W Muscat’s high standards of innovation, creativity, and culinary excellence.

You will collaborate closely with the Executive Chef, F&B team, and culinary staff to deliver premium bakery products for all hotel outlets, banquets, and special events.


Key Responsibilities

Bakery Operations & Production

  • Supervise daily bakery production, ensuring consistency, quality, and presentation of baked goods.

  • Plan and execute production schedules to meet hotel and outlet requirements.

  • Ensure proper handling, storage, and rotation of bakery ingredients.

  • Develop and maintain innovative recipes for breads, pastries, desserts, and specialty baked goods.

  • Monitor baking processes to ensure adherence to safety, hygiene, and W brand standards.

  • Oversee plating, presentation, and packaging for all bakery items.

Team Leadership & Training

  • Lead, coach, and motivate the bakery team to achieve operational excellence.

  • Conduct training for staff on techniques, recipes, and brand standards.

  • Manage performance evaluations and provide constructive feedback.

  • Promote teamwork, professionalism, and a positive work environment within the kitchen.

Inventory & Cost Control

  • Monitor ingredient stock levels, place orders, and maintain optimal inventory.

  • Minimize waste and ensure cost-effective production processes.

  • Maintain accurate records of production, inventory, and consumption.

  • Collaborate with the Executive Chef and F&B Manager to control costs while maintaining quality.

Guest Experience & Quality Assurance

  • Ensure all bakery products meet W Hotels’ luxury standards.

  • Handle guest inquiries or complaints related to bakery products professionally.

  • Innovate and introduce seasonal or themed baked goods to enhance guest experience.

  • Collaborate with F&B outlets and banquets to ensure timely and high-quality delivery of products.

Health, Safety & Compliance

  • Maintain strict adherence to food safety, hygiene, and sanitation standards.

  • Ensure all bakery staff follow W Hotels’ safety procedures.

  • Keep bakery equipment and work areas clean and well-maintained.

  • Report maintenance issues or safety hazards promptly.


Qualifications & Skills

  • Minimum 3–5 years of experience in a luxury hotel or upscale bakery.

  • Proven leadership and supervisory experience in bakery operations.

  • Strong knowledge of baking techniques, pastry arts, and dessert preparation.

  • Creative mindset with the ability to develop innovative recipes.

  • Excellent organizational, communication, and problem-solving skills.

  • Ability to work in a fast-paced, high-volume environment.

  • Professional appearance and adherence to hygiene and safety standards.

  • Culinary degree or formal training in pastry/baking is preferred.
