As a Commis II – Cold Kitchen – Rotana Ras Al Khaimah – The Mangroves, you will support the cold kitchen team in preparing dishes for all outlets including buffet, à la carte, room service, and banquets. You will assist in daily mise en place, follow recipes accurately, and ensure all items are ready for timely service.

Prepare cold kitchen dishes including salads, dressings, canapés, starters, and buffet items as per standard recipes.

Assist the Chef de Partie and Demi Chef de Partie in daily mise en place for breakfast, lunch, dinner, and banquet service.

Ensure all food items meet hotel standards for taste, texture, and presentation.

Maintain cleanliness and organization of the cold kitchen workstation at all times.

Correctly store ingredients, follow FIFO procedures, and ensure proper labeling.

Monitor food quality and temperature before service.

Assist in buffet and banquet setup, including decorative displays and cold platters.

Reduce food wastage by following proper portion control and preparation techniques.

Follow HACCP, hygiene, and food safety standards at all times.
