Rotana Ras Al Khaimah – The Mangroves is currently hiring an experienced and passionate Chef de Partie – Japanese to join our Culinary team in Ras Al Khaimah, UAE. The Chef de Partie – Japanese – Rotana Ras Al Khaimah – The Mangroves role is responsible for managing a specific kitchen section and ensuring that all Japanese dishes are prepared and presented to the highest standards. The successful candidate will work closely with the Sous Chef and Executive Chef, ensuring smooth operations during breakfast, lunch, dinner, and special events.

This role is ideal for chefs with experience in Japanese cooking techniques such as sushi and sashimi preparation, hot Japanese dishes, sauces, marinades, and traditional plating. You must be able to maintain quality, hygiene, and consistency while managing the team efficiently in a busy kitchen.


Job Summary – Chef de Partie – Japanese

As Chef de Partie – Japanese – Rotana Ras Al Khaimah – The Mangroves, you will take responsibility for daily operations of the Japanese kitchen section. You will ensure all food is prepared as per standard recipes, portion control guidelines, and Rotana brand standards.

You will supervise Demi Chefs and Commis Chefs, manage mise en place, maintain hygiene standards, and ensure guest satisfaction through high-quality food production. The Chef de Partie is expected to support menu planning, control food costs, and ensure the kitchen section remains organized and fully prepared for service.


Key Responsibilities – Chef de Partie – Japanese

The main responsibilities of the Chef de Partie – Japanese – Rotana Ras Al Khaimah – The Mangroves include:

  1. Manage daily operations of the Japanese kitchen section and ensure smooth service.

  2. Prepare authentic Japanese dishes such as sushi, sashimi, maki rolls, nigiri, tempura, ramen, yakitori, and teppanyaki items (based on outlet concept).

  3. Ensure all dishes meet required standards of taste, texture, portioning, and presentation.

  4. Maintain mise en place and ensure ingredients are available and prepared before service.

  5. Supervise and guide Demi Chef de Partie and Commis Chefs to ensure productivity and quality.

  6. Monitor food safety practices, hygiene, and cleanliness according to HACCP standards.

  7. Ensure proper storage, labeling, and stock rotation (FIFO) for all Japanese ingredients.

  8. Control food wastage by applying correct portion control and proper preparation methods.

  9. Assist Sous Chef in menu development, seasonal promotions, and special Japanese themed nights.

  10. Ensure all kitchen equipment such as knives, sushi mats, refrigerators, and hot plates are handled safely.

  11. Coordinate with service team for guest requests, special dietary requirements, and VIP orders.

  12. Maintain proper communication with purchasing and stores for ingredient ordering and availability.

  13. Ensure kitchen section is clean, organized, and ready for inspection at all times.

  14. Support banquet and event operations when Japanese cuisine is required.

  15. Ensure Rotana grooming standards and professional kitchen behavior are followed at all times.


Requirements – Chef de Partie – Japanese 

To qualify for the Chef de Partie – Japanese – Rotana Ras Al Khaimah – The Mangroves position, candidates should have:

  • Minimum 3–5 years of experience in Japanese cuisine within a hotel or restaurant kitchen.

  • Strong skills in sushi and sashimi preparation and Japanese knife handling techniques.

  • Knowledge of Japanese ingredients, sauces, and cooking methods.

  • Ability to manage a kitchen section and supervise junior staff.

  • Understanding of hygiene practices and HACCP food safety standards.

  • Ability to work under pressure and maintain consistency during busy operations.

  • Strong teamwork and communication skills.

  • Flexibility to work shifts, weekends, and public holidays.
