The Cove Rotana Resort UAE is currently seeking a highly motivated and experienced Assistant Director of Food and Beverage to join our leadership team. The Assistant Director of Food and Beverage plays a critical role in supporting the Director of Food and Beverage in managing and overseeing all food and beverage operations across the resort. This includes restaurants, bars, room service, banquets, events, and any other outlets within the property. The role focuses on maintaining high service standards, improving guest satisfaction, driving revenue, controlling costs, and ensuring compliance with health and safety regulations.

This position requires a strong leader who can manage multiple outlets, work closely with culinary and service teams, and contribute to strategic planning. The successful candidate will have excellent communication skills, a hands-on management style, and the ability to ensure smooth daily operations while meeting business objectives.

Key Responsibilities

As an Assistant Director of Food and Beverage, your key responsibilities include:

  1. Support the Director of Food and Beverage in managing the daily operations of all F&B outlets, room service, and banquet functions.

  2. Ensure high standards of service delivery, food quality, and guest satisfaction across the resort.

  3. Assist in developing departmental budgets, revenue forecasts, and cost control strategies.

  4. Monitor and improve outlet performance through daily inspections, audits, and operational reviews.

  5. Lead, motivate, and supervise outlet managers and supervisors to ensure team efficiency and productivity.

  6. Ensure proper staffing levels, scheduling, and manpower planning to meet operational requirements.

  7. Support recruitment, onboarding, and training programs for F&B colleagues to enhance service standards.

  8. Work closely with the Culinary team to ensure menu consistency, food presentation, and product quality.

  9. Handle guest feedback and complaints professionally, ensuring quick resolution and service recovery.

  10. Drive upselling strategies, promotions, and special events to increase revenue and guest engagement.

  11. Ensure compliance with hygiene standards, HACCP, and food safety regulations in all outlets.

  12. Maintain inventory control, ordering processes, and stock management to reduce wastage and cost.

  13. Coordinate with Finance, Purchasing, and Stores teams to manage cost efficiency and supplier performance.

  14. Support banquet and event operations to ensure successful execution of weddings, conferences, and group functions.

  15. Ensure all operational procedures, SOPs, and brand standards are implemented and followed consistently.


Skills and Requirements

To be successful in this role, the ideal candidate should have:

  • Minimum 5–8 years of experience in Food & Beverage operations within a hotel or resort.

  • Previous experience in a management or assistant leadership role is required.

  • Strong knowledge of multi-outlet operations, banquet management, and service standards.

  • Excellent leadership and team management skills.

  • Strong understanding of budgeting, forecasting, cost control, and revenue generation.

  • Knowledge of food safety standards, HACCP, and hygiene regulations.

  • Ability to work under pressure and manage multiple priorities.

  • Strong communication skills in English (additional languages are an advantage).

  • Good knowledge of POS systems, reporting, and operational tools.
