Job Overview – Commis Chef II – Hot & Cold Kitchen

The Commis Chef II – Hot & Cold Kitchen plays a vital supporting role in daily kitchen operations. Reporting to the Chef de Partie and Sous Chef, this position requires hands-on involvement in food preparation, cooking, plating, and maintaining hygiene standards.

Unlike entry-level positions, the Commis Chef II is expected to work more independently, manage assigned tasks confidently, and ensure consistent quality in both hot and cold kitchen sections. The role demands efficiency, organization, and strong attention to detail.

Key Responsibilities – Commis Chef II – Hot & Cold Kitchen

• Prepare and cook menu items in the hot and cold kitchen sections under supervision.

• Assist in the preparation of salads, cold appetizers, sauces, soups, and hot main-course items.

• Ensure dishes are prepared according to hotel standards and recipes.

• Monitor portion control and reduce food waste.

• Maintain proper storage, labeling, and rotation of food items using FIFO procedures.

• Follow HACCP guidelines and food safety regulations strictly.

• Support senior chefs during busy service hours.

• Maintain cleanliness and organization of workstations.

• Train and guide Commis III staff when required.

• Ensure all kitchen equipment is handled safely and maintained properly.
