The Commis I – Hot Kitchen – Rotana Ras Al Khaimah – The Mangroves will assist the Chef de Partie and Demi Chef de Partie in preparing, cooking, and presenting hot kitchen items such as soups, sauces, meat, poultry, fish, and vegetables. The role requires attention to detail, consistency, and adherence to hotel standards, hygiene, and safety procedures.

Commis I – Hot Kitchen – Job Summary

As a Commis I – Hot Kitchen – Rotana Ras Al Khaimah – The Mangroves, you will be responsible for assisting in the preparation and cooking of hot dishes across all outlets. You will work under the supervision of the Chef de Partie and Demi Chef de Partie, ensuring that all food items are prepared on time, meet the required standards, and are presented beautifully for guest service.

This role also involves maintaining cleanliness, organizing the work station, following recipes, and ensuring compliance with hygiene and food safety standards such as HACCP.


Key Responsibilities – Commis I – Hot Kitchen – Rotana Ras Al Khaimah – The Mangroves

  1. Assist in preparing hot kitchen dishes including soups, sauces, meat, poultry, seafood, and vegetables.

  2. Follow standard recipes, portion control guidelines, and presentation standards.

  3. Support the Chef de Partie in daily mise en place for breakfast, lunch, dinner, and banquet services.

  4. Maintain cleanliness and organization of the hot kitchen section at all times.

  5. Ensure all food items are stored correctly, labeled, and rotated using FIFO principles.

  6. Monitor quality, taste, and temperature of prepared dishes before service.

  7. Support banquet, buffet, and special event preparation when required.

  8. Minimize food wastage by handling ingredients carefully and following proper preparation methods.

  9. Follow HACCP, hygiene, and safety guidelines at all times.

  10. Maintain kitchen equipment, tools, and utensils, ensuring they are clean and in good working condition.

  11. Report any equipment malfunctions, ingredient shortages, or kitchen issues to the Chef de Partie.

  12. Assist in training and mentoring junior commis chefs or kitchen trainees if required.

  13. Work closely with other kitchen sections to ensure smooth workflow and timely service.

  14. Maintain professional grooming, conduct, and teamwork at all times.

  15. Adhere to hotel standards, SOPs, and operational guidelines.

Skills and Requirements – Commis I – Hot Kitchen

  • Minimum 1–3 years of experience in a hotel or restaurant hot kitchen section.

  • Knowledge of cooking techniques, kitchen operations, and food preparation standards.

  • Basic understanding of hygiene, sanitation, and HACCP guidelines.

  • Ability to work under pressure in a fast-paced environment.

  • Strong teamwork, communication, and learning attitude.

  • Willingness to work shifts, weekends, and public holidays.

  • Culinary diploma or certification is preferred but not mandatory.
