Deputy Sushi Master – One&Only The Palm

Key Duties and Responsibilities

  • Take part in the preparation, cutting, and mise en place of nigiri according to L’Abysse standards.
  • Guarantee consistency, precision, and excellence in taste.
  • Be proactive in developing new nigiri with the Sushi chef, continuously embracing creativity.
  • Lead the sushi counter service during time of service.
  • Once fully trained and confident, be able to replace the Sushi Chef when required.
  • Take pleasure in contributing to the creative process and development of new portions.
  • Be attentive to the team, train, pass on knowledge, and communicate any issues to the supervisor.
  • Ensure impeccable personal presentation as well as that of the team.
  • Take an interest in the restaurant’s performance (number of covers, food cost, etc.).
  • Check deliveries of goods in terms of both quality and quantity.
  • Ensure full compliance with hygiene and food safety standards (HACCP).
  • Take part in the training and supervision of commis or interns within the sushi team.
  • Maintain an exemplary team spirit in a demanding and collaborative environment.
  • Be a proactive force within the team, always striving for improvement

 

Skills, Experience & Educational Requirements

  • Culinary school diploma and/or more than 3 years’ work experience.
  • 5-star Hotel work experience.
  • Knowledge of Food Safety systems (HACCP).
  • Fluency in English.
