The Food & Beverage Manager at Food & Beverage Manager – Dukes The Palm Dubai Hotel is responsible for overseeing all food and beverage operations within the property, ensuring exceptional guest experiences, operational efficiency, and financial performance. This role requires a strategic leader with a strong understanding of culinary trends, beverage management, and service excellence. The Food & Beverage Manager will lead a team of chefs, bartenders, servers, and support staff, maintaining high standards across all dining outlets, banquet services, and bars.

Key Responsibilities:

1. Operational Management:

• Plan, organize, and supervise daily food and beverage operations across all outlets, including restaurants, bars, room service, and banquets.

• Ensure consistent delivery of high-quality food and beverage services that exceed guest expectations.

• Monitor operational standards, workflow, and staff performance to maintain efficiency and guest satisfaction.

2. Team Leadership:

• Recruit, train, mentor, and develop a competent F&B team.

• Foster a positive work environment, encouraging staff engagement, accountability, and professional growth.

• Conduct regular team meetings, performance reviews, and coaching sessions.

3. Financial Performance:

• Prepare and manage the F&B department budget, including forecasting revenue and controlling costs.

• Monitor key performance indicators such as food cost, beverage cost, labor cost, and profitability.

• Implement strategies to optimize revenue generation through menu engineering, promotions, and upselling techniques.

4. Guest Experience:

• Ensure all guest interactions are handled promptly, professionally, and courteously.

• Develop and implement service standards, ensuring consistent delivery across all outlets.

• Handle guest complaints or special requests with professionalism and urgency.

5. Menu & Beverage Development:

• Collaborate with Executive Chef and mixologists to design seasonal menus and beverage offerings.

• Conduct market research to identify culinary trends and new beverage concepts.

• Ensure menus align with guest preferences, brand standards, and profitability goals.

6. Quality Control & Compliance:

• Enforce hygiene, safety, and sanitation standards in accordance with local regulations and brand policies.

• Conduct regular inspections of food storage, preparation areas, and service outlets.

• Ensure adherence to licensing requirements, food handling procedures, and health regulations.

7. Events & Banquets:

• Oversee banquet operations, including weddings, conferences, and corporate events.

• Coordinate with event planners, chefs, and service teams to deliver flawless experiences.

• Manage inventory, setup, staffing, and execution for all events.

Qualifications & Skills:

• Bachelor’s degree in Hospitality Management, Culinary Arts, or related field preferred.

• Minimum 5–7 years of experience in F&B management within hotels, resorts, or fine dining establishments.

• Strong leadership, communication, and interpersonal skills.

• Excellent financial acumen with experience in budget management and cost control.

• Knowledge of international cuisines, beverage programs, and current food trends.

• Ability to work flexible hours, including evenings, weekends, and holidays.
