Role Overview

As Jr. Sous Chef – Ajman Saray, a Luxury Collection Resort, you will assist in supervising kitchen operations, managing culinary staff, and maintaining compliance with food safety and hygiene standards. This position requires strong technical skills, leadership ability, and creativity to support the development and execution of innovative menus while maintaining operational efficiency.

Key Responsibilities

  • Assist the Executive Chef and Sous Chef in managing daily kitchen operations across multiple outlets.

  • Supervise and mentor junior kitchen staff, including commis, demi-chefs, and apprentices.

  • Ensure consistent preparation, cooking, and presentation of dishes according to recipes and luxury standards.

  • Support menu planning, including seasonal offerings, special events, and dietary accommodations.

  • Monitor quality control, portion sizes, and plating standards to maintain brand consistency.

  • Ensure proper handling, storage, and rotation of all ingredients and food products.

  • Conduct regular inventory checks and assist with procurement of supplies to minimize waste.

  • Maintain a clean, safe, and organized kitchen in compliance with HACCP, safety, and hotel policies.

  • Assist with cost control measures, including food cost analysis, portioning, and minimizing wastage.

  • Coordinate with F&B outlets, banquet teams, and events staff to ensure timely and seamless service.

  • Participate in the training and development of culinary staff to enhance skills and productivity.

  • Support the creation of innovative recipes and presentations to enhance the guest dining experience.

Candidate Requirements

  • Culinary degree or diploma from a recognized institution preferred.

  • Minimum 3–5 years of professional kitchen experience in luxury hotels, resorts, or fine dining establishments.

  • Previous experience in a supervisory or junior management role within a high-volume kitchen.

  • Strong knowledge of international cuisines, plating techniques, and culinary trends.

  • Familiarity with HACCP, food safety regulations, and hygiene standards.

  • Excellent organizational and time management skills to coordinate multiple outlets and events.

  • Leadership, team-building, and mentoring capabilities.

  • Creativity and passion for culinary innovation.

  • Ability to work flexible hours, including weekends, holidays, and peak service periods.

  • Fluent in English; knowledge of Arabic or other languages is an advantage.
